| 内容記述 | 広島県はレモンの主要産地であることから，市場や食関連産業でのレモンの市場価値を高める活動に取り組んでいる。レモン摂取の健康への効果は，レモンに含まれるビタミンC，レモン精油，有機酸だけでなく，抗酸化力の強いフラボノイドによってももたらされる。最近ではポリフェノールが豊富なレモンを健康増進に有益な果実として注目する研究が出されている。本稿では，レモンに含まれる生物活性化合物と栄養や健康との関連について文献を通して紹介する。 | |||||||||||||

| 内容記述 | Hiroshima prefecture as a leading representative of the lemon producing regions promotes to raise the commercial value of the lemon for the fresh products market and food industry.The benefi cial effects of the dietary lemon can be attributed not only to the vitamin C, essential oils and organic acids,but also to the antioxidant activity of their fl avonoids, Recently, several studies highlighted lemon as an important healthpromoting fruit rich in phenolic compounds. This review focuses on the relevance of Citrus limon for nutrition and health,bringing an overview of what is published on the bioactive compounds of this fruit. | |||||||||||||
